Oat Pancakes are a great alternative to regular pancakes! Oats are high in fibre and contain vital minerals such as magnesium and zinc.

I love this healthy recipe because it contains some of my favourite ingredients (bananas and oats are both fantastic foods for an upset stomach) and is the perfect lazy Sunday morning breakfast!

Healthy Banana Oat Pancakes Recipe

Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins
Serves: 2-3
Dietary preferences: Vegetarian

Ingredients:

  • 1 cup rolled oats
  • 200g fat-free cottage cheese
  • 2 large eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 chopped banana
  • honey, to taste
  • nuts of your choice (I love pecans or walnuts with this recipe!)

Method:

  1. Put the rolled oats, cottage cheese, eggs, cinnamon, vanilla extract and chopped banana into a food processor and blend until the mixture is smooth.

  2. Heat a nonstick frying pan over medium heat.

  3. Pour spoonfuls of batter until golden brown on both sides.

  4. Serve with nuts, a drizzle of honey and extra banana.
