You need to try my healthy version of plain waffles — they are SO tasty! The secret is the special blend of nutrient-rich flours; these waffles use quinoa flour, rice flour and whole wheat flour. 

The best part about these waffles is that you can top them with anything you like — fresh fruit, honey and yoghurt are always a winning combination for breakfast or dessert!

Dietary preferences: Vegetarian, Soy-free

Ingredients:

  • ½ cup quinoa flour
  • ½ cup rice flour
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 1 banana, mashed 
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 1 ½ cups almond milk
  • 1 tsp vanilla extract
  • Handful of blueberries, to garnish
  • Sliced banana, to garnish

Method:

  1. Preheat the waffle iron on medium heat.
  2. In a large mixing bowl combine the flours, baking powder, cinnamon and nutmeg and set aside.
  3. In a separate large bowl, whisk the eggs until fluffy and when bubbles start to form. Add the milk, applesauce and vanilla. Whisk well to combine.
  4. Stir through the mashed banana and beat until smooth.
  5. Add the wet ingredients to the dry ingredients and gently stir with a wooden spoon. Try not to over mix.
  6. Coat the waffle iron with cooking spray.
  7. Carefully spoon your batter onto the preheated waffle iron and cook until golden brown.
  8. Repeat until all the batter is finished.
  9. Top with blueberries and sliced banana.
