This chocolate chia pudding is such a delicious dessert! If you like all things decadent, you will love this one. The flavours go so well together, it contains one of my favourite superfoods - chia seeds - and it's super easy to make.

Chocolate Chia Pudding With Banana & Fig Recipe

Total time: 10 mins + 4 hours chilling time
Serves: 2
Dietary preferences:  Vegetarian, Gluten-free

Ingredients:

 

  • 25g chia seeds
  • 1 medium banana, cut in half
  • 135ml milk of choice
  • 1 1/2 tbsp raw cacao powder
  • 1 tbsp maple syrup
  • 30g goji berries
  • 1 medium fig, sliced
  • 10g almonds

Method:

1. Place the chia seeds and one half of the banana into a medium bowl and mash with a fork until well combined. Add the milk, cacao powder and maple syrup and whisk until well combined and no lumps remain.

2. Pour the mixture into two glass containers (small jars work well) and cover with cling wrap. Refrigerate for at least 4 hours or overnight, if possible. 

3. To serve: slice the remaining half banana and place on top of the puddings, followed by the goji berries, almonds and sliced fig.
