After your workout, it's time to chill out. Sit back, relax and enjoy a Gazpacho! I love this unique twist on the traditional Spanish dish!

Watermelon ‘Gazpacho’ Recipe

Total time: 5 mins + 1-2 hours chilling time
Serves: 2
Dietary preferences: Vegan, Vegetarian, Dairy-free, Nut-free

Ingredients:

 

  • 400g seedless watermelon, peel removed, chopped
  • 2 vine-ripened tomatoes, chopped
  • ¼ small red onion, chopped
  • ½ medium cucumber, chopped
  • ¼ medium red capsicum, chopped
  • 2 slices of day old (stale) bread, crusts removed, in pieces
  • 1 tbsp extra virgin olive oil
  • 1-2 tsp white wine vinegar
  • Salt and pepper, to taste
  • Fresh mint leaves, to garnish

 


Method:


1. Place all the ingredients in a blender and blend until smooth. Add a little extra cold water, if necessary, to reach your desired consistency.

2. Place the gazpacho in the refrigerator to chill for 1-2 hours.

Serve the chilled gazpacho in glasses and garnish with mint leaves. Enjoy!
