Many people think of eggs as the main component of breakfast dishes, but you should seriously consider adding eggs to your evening meal! As a great source of protein, eating eggs for dinner can help you feeling satisfied after a long day. They are also usually quite cheap to buy, which is great if you’re trying to stretch your meals further on a budget.

Some ways to prepare eggs for dinner

When you’re trying to eat healthier, eggs are one of the most versatile ingredients to have on hand. To make cooking easier, I’ve put together some simple ways to add eggs to your dinner meal.

As the perfect topper

Place a fried egg on top of some roasted vegetables for a little extra protein. Simply toss a mix of vegetables (such as zucchini, sweet potato, capsicum or mushrooms) in a little oil and roast until tender. When the veggies are almost done, add a bit of oil to a frying pan and fry your eggs. Personally, I like them still soft in the centre, but you can cook them a little longer if you prefer. Serve the veggies and top with your fried egg before seasoning with some sea salt and a bit of chilli for extra flavour.

Mixed in with a tasty salad

Yum, two of my favourite things combined! Add some bulk to a fresh salad with easy poached eggs. Create a delicious salad out of quinoa, mushrooms, spinach, rocket, feta and some lightly toasted sunflower seeds. Your poached eggs can serve double duty as a garnish and source of protein.

Baked into delicious veggies

When you want the perfect side dish, bake some eggs inside your favourite vegetables. Try removing the stem from portobello mushrooms or taking the pit out of an avocado and replacing it with an egg. You could also halve some capscium to add an egg once you remove the seeds. Place in the oven until the egg sets and add some seasoning. These options are fantastic to pair with grilled chicken or a serving of red meat.

With sauteed vegetables

This one is super easy and super tasty! Just saute some leafy greens (like spinach or kale) and lay a couple of fried eggs on top. Slice up some avocado and grind black pepper over the whole mix. Perfect on its own or as a side dish.

In veggie fritters

It’s really simple to make vegetable fritters that are light and tasty. Simply grate two zucchinis, two potatoes and two carrots into a bowl, add some chopped onion, the yolk of one egg (hold on to the egg white), corn and half a cup of self-raising flour. Beat the egg whites until they’re stiff and slowly mix the rest of the ingredients in with the beaten egg whites before shallow frying.

Some of these recipe ideas are so, so simple! You don’t have to stick to quiches and omelettes when making meals with eggs for dinner.
