Have A Good Week With These Breakfast Meal Prep Ideas
When you’re short on time, sitting down to eat breakfast can be something that gets skipped. I regularly tell you girls how important it is to eat a healthy breakfast, but I do understand how hard it can be to make time. That’s why I thought I’d share these breakfast suggestions you can prepare the day before.
Breakfast Meal Prep Ideas
Even if you’re not a morning person, these breakfast meal prep ideas will help kick-start a good day.
As you might have guessed, I’m a big fan of overnight oats. By making these the night before, they are ready to grab and go on a busy morning.

Smoothie freezer packs
Smoothie freezer packs can be put together in advance, then stored in the freezer ready to go at a moment’s notice. You simply pop it into a freezer-friendly container or a freezer bag, make a note of the date and freeze it. When you want to make your smoothie, drop the frozen ingredients into the blender with whichever liquid you are using (such as milk or water).
There’s lots of combinations you could use, like this berry smoothie:
1 cup (160g) blueberries
1 cup (160g) strawberries
1 banana (sliced up).
You can also add extra nutrients by adding chia seeds as you blend everything together.
By making your own yoghurt parfait, you can control exactly what is in it (unlike if you were to buy one already made from a store). Stock up on a couple of mason jars or find some containers that you can fill and eat out of easily.
To make parfait, layer Greek yoghurt with muesli, granola or nuts and a mixture of your favourite fruit. Get as creative as you like experimenting with different types of fruit, like berries, mango, stewed apple or cherry. If you want to make it the night before, pop it in the fridge and you’ve got something healthy and sweet to look forward to in the morning.
Use some leftover quinoa to make a healthy and quick breakfast bite that you can take with you. Simply mix approximately 2½ cups (460g) of cooked quinoa (after it has cooled) with:
- 4 beaten eggs
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- ⅓ cup milk of choice
Pour the mixture into a baking dish lined with baking paper and spread it so that the mixture is even. Bake in the oven at 180°C for 25 minutes or until it’s golden on top. Once the bake has cooled, you can cut it into smaller portions and serve with some berries or sliced banana.
Pancakes or fritters
Another fantastic make-ahead idea! Sweet or savoury pancakes, or fritters, can actually be frozen and simply reheated when you’re ready to eat.
My sweet corn, zucchini and ricotta fritters are a great savoury breakfast that you can make the day before and keep in the fridge.
Breakfast is such an important meal, because it fuels your body for the day ahead. Rather than skipping breakfast on busier days, try some of these grab-and-go meal prep ideas and have a great day!
