I love making my own Tzatziki, it tastes so much better than the pre-made ones you find in most supermarkets! I like to serve it with chicken and a wholemeal pita for a quick lunch! It also goes really well with grilled lamb or used as a dip for veggie sticks. Delish!
- 2 cups of plain Greek yoghurt
- 2 garlic cloves, minced
- 1 large cucumber, seeded
- 1 tbsp chopped fresh dill
- 1 tbsp lemon juice
- 1/2 tsp salt
- Pinch of black pepper
- Grate cucumber and place in a sieve. Sprinkle with a little salt and let sit for 10 minutes. Squeeze the cucumber to get rid of any moisture.
- Combine all ingredients and adjust seasoning and lemon juice as needed. Serve immediately or refrigerate in a sealed container for up to 2 days.
