I love making my own tzatziki, it tastes so much better than the pre-made ones you find in most supermarkets! I like to serve it with a healthy falafel in pita for a quick lunch! It also goes really well with grilled lamb or used as a dip for veggie sticks. Delish!

Ingredients:
1 medium cucumber
300g plain Greek yoghurt
2 garlic cloves, crushed
1 tbsp chopped fresh dill
1 tbsp lemon juice
sea salt and ground black pepper, to taste

Method:

  1. Peel and remove the seeds from the cucumber. Grate and squeeze out any excess water.
  2. Place the cucumber, yoghurt, garlic, dill, lemon juice, salt and pepper in a small bowl and mix to combine.
  3. Serve immediately or refrigerate in an airtight container for up to 2 days. Enjoy!
