Healthy Chia Seed Omelette Recipe

This healthy recipe is definitely a favourite of mine! Chia seeds are so versatile and don't only belong in smoothies - add them into your eggs for an added boost of nutrients! This omelette is packed full of protein and fibre, perfect to kickstart your day with.

Ingredients (Serves 2)
4 eggs
2 tsp olive oil
2 tsp chia seeds
2 cups baby spinach
1 cup diced tomatoes
salt and pepper

Directions

  1. Beat eggs for 2 minutes then add sea salt and black pepper.

  2. Pour olive oil into a hot pan then add baby spinach, tomatoes and chia seeds.

  3. Add egg mixture on top of other ingredients and swirl until thinly covered (cook on medium heat).

  4. Fold egg mixture over and turn heat off.

  5. Serve with extra baby spinach or rye toast and enjoy!
