Rolled oats are great to have in your pantry because you can do so much with a simple bowl of oats in the morning! There are so many oat topping recipe ideas, or you can add them to your smoothie or use them to make healthy pancakes. 

 

Banana Caramel Oatmeal Recipe

Ingredients:

  • 100ml low-fat milk (or milk of choice)
  • 200ml water
  • 50g rolled oats
  • 1 banana, sliced in half lengthways
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 pinch ground cinnamon
  • ¼ tsp vanilla extract
  • 20g toasted hazelnuts, roughly chopped

Method:

1. Bring the milk and water to the boil over medium-high heat. Stir in the oats and reduce the heat to medium-low. Simmer for 5 minutes or until thickened, stirring occasionally.

2. Heat the oil in a non-stick fry pan over medium heat. Add the maple syrup, cinnamon and vanilla and stir to combine. Reduce the heat to medium-low and let the mixture simmer for 1-2 minutes until it starts to bubble and foam.

3. Add the banana halves, cut side down and cook for 2-3 minutes or until lightly golden. Carefully flip the bananas and cook for a further minute. Remove from the heat.

4. To serve, pour the porridge into a serving bowl. Top with the banana halves, drizzle over the remaining caramel sauce and sprinkle with the toasted hazelnuts. Enjoy!
