This banana chia pudding recipe is super fresh and light. Definitely a winner on those warm summery nights!
Ingredients (serves 2):
250ml milk of choice
2 tbsp chia seeds
2 tsp natural honey
¼ tsp ground cinnamon
½ tsp vanilla extract
1 medium banana, peeled and halved
Cacao nibs, to serve
2. Cover with plastic film and place in the refrigerator for 4 hours or overnight to chill. Before serving, place one half of the banana in a small bowl and mash with a fork until smooth.
3. Add the mashed banana to the chia pudding and mix until well combined. Slice the remaining banana into thin slices.
To serve, spoon the chia pudding mixture into two small glasses or jars. Top with the sliced banana and cacao nibs.
