I know Australia isn’t the only place in the world to love eating something like scones for a mid-morning snack! If you love baking or if you have never had a chance to make scones before, these healthy Blueberry Scones are a great place to start. 

One thing that is really interesting about scones is for such a simple snack, there are so many different ways to make them. I know many people have their own secret when it comes to baking them — there is always lots of debate about what makes the best scone recipe!

The recipe I want to share with you today is for a healthier version of sweet scones. Of course, if you can’t imagine eating scones without a little jam and cream, I’ve got that covered too.

Healthy Blueberry Scones

Beautifully soft and with just the right amount of sweetness, these scones are so delicious, it will be so hard to stop at just one!

I’ve included a variation for gluten-free scones as well, you can make a simple switch to gluten-free flour and still enjoy these!

Easy Scone Recipe

Ingredients:

  • 300g wholemeal self-raising flour or gluten-free self-raising flour
  • pinch of sea salt
  • 1 tsp vanilla extract
  • 125ml reduced fat milk or dairy-free milk of choice, plus extra to glaze
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 2 tbsp pure maple syrup (optional)
  • 50g frozen blueberries

Method:

  1. Preheat oven to 180°C (356°F) and line a baking tray with baking paper.
  2. Place the flour and sea salt in a large bowl and stir until well combined. 
  3. Add the vanilla extract, milk, olive oil, lemon zest and maple syrup, if using, and mix for 1-2 minutes or until a soft dough forms. Gently fold in the blueberries. Use your hands to press the dough into a ball.
  4. Place the dough on a floured flat surface and roll out evenly with a rolling pin. The dough should be about 3 - 4 cm (1.5 - 2 inches) thick.
  5. Use a round cookie or scone cutter to make scone shapes out of the dough and place them on the baking tray, leaving a little space in between to allow the scones to expand. Brush each scone with extra milk to glaze.
  6. Bake in the oven for 20-25 minutes or until golden brown.
  7. To serve the Healthy Blueberry Scones, slice them in half and top with some whipped ricotta and blueberry compote, if desired. Enjoy!
Best Scone Recipe

Frozen blueberries are used in this recipe but you could use fresh if you like. Just bear in mind that fresh blueberries may change to a lighter colour when you bake them but they will have the same flavour.  

Scones that are soft and fluffy are my favourite, especially when it is an easy scone recipe to make. Dressing them up with some whipped ricotta and jam or compote really helps to bring out the sweetness of the blueberries too. 

If you’re trying to stay on track with healthy eating habits, these scones are a great way to enjoy a sweet treat that uses healthier ingredients. You don’t need to cut out foods that you enjoy eating — and that includes baked goodies.
