I am absolutely loving the warm weather here in Australia right now! Summer is easily my favourite time of year, and this week we’re celebrating Australia Day (our national day). Many people celebrate by having a barbecue or going to the beach, all of those things you might think of when it comes to us Aussies! So, this is a quick healthy popsicle recipe that you can make for dessert. No matter where you live, these popsicles are worthy of their own celebration!

If you’re heading off to a barbecue and want to bring a dish with you, try this healthy Panzanella Salad! Quick and tasty!

Healthy Gold Popsicles

Total time:  5 mins + 3-4 hours or overnight freezing time
Serves: Makes 10 popsicles
Dietary preferences: Vegetarian, Vegan, Dairy-free, Gluten-free, Nut-free

Ingredients:

  • 250g frozen pineapple pieces
  • 1 lime, juiced
  • 150ml coconut water
  • 2 6-mold popsicle mold
  • 10 wooden popsicle sticks

Method:

1. Place all the ingredients in a high-powered blender and blend until well combined.

2. Pour the mixture into the popsicle molds, leaving a 1 cm gap at the top. Freeze for 30 minutes, then insert the popsicle sticks halfway. Freeze for another 3-4 hours or overnight.

3. Run popsicle molds under warm water for a few seconds until popsicles slide easily from the mold. Enjoy!

Healthy Green Popsicles

  • 175ml low-fat milk (or milk of choice)
  • 1 large handful of baby spinach leaves
  • 1 ripe banana
  • 125g pineapple, peeled and roughly chopped
  • 2 kiwifruit, peeled
  • 2 6-mold popsicle mold
  • 10 wooden popsicle sticks

Method:

1. Place all the ingredients except 1 kiwifruit in a high-powered blender and blend until smooth.

2. Slice the remaining kiwifruit into rounds. Place a slice or two into each of the popsicle molds.

3. Pour the mixture into the popsicle molds, leaving a 1 cm gap at the top. Freeze for 30 minutes, then insert the popsicle sticks halfway. Freeze for another 3-4 hours or overnight.

4. Run popsicle molds under warm water for a few seconds until popsicles slide easily from the mold. Enjoy!
