Quinoa & Mixed Berry Smoothie

 
A filling, delicious and protein-rich healthy breakfast smoothie made with quinoa and mixed berries- YUM! 
 
Ingredients (2 serves):
250ml low-fat milk
100g low-fat plain yoghurt
1 medium banana, frozen
250g frozen mixed berries
35g quinoa (equivalent to 100g cooked)
1 tsp chia seeds
2 tsp pure maple syrup
 
 

 

Method:

1. To cook the quinoa, place the quinoa and 160 ml water in a small saucepan and bring to the boil over high heat. Reduce the heat to low and simmer for 10-12 minutes. Remove from the heat and set aside to cool.
 
2. Place all the ingredients in a high-powered blender and blend until smooth.
 
3. To serve, pour into a glass or jar and enjoy!
