Watermelon ‘Gazpacho’ Recipe

After your workout, it's time to chill out. Sit back, relax and enjoy a Gazpacho! I love this unique twist on the traditional Spanish dish!

Ingredients:
400g seedless watermelon, peel removed, chopped
2 vine-ripened tomatoes, chopped
¼ small red onion, chopped
½ medium cucumber, chopped
¼ medium red capsicum, chopped
2 slices of day old (stale) bread, crusts removed, in pieces
1 tbsp extra virgin olive oil
1-2 tsp white wine vinegar
Salt and pepper, to taste
Fresh mint leaves, to garnish

Sweat With Kayla
Method:
1. Place all the ingredients in a blender and blend until smooth. Add a little extra cold water, if necessary, to reach your desired consistency.

2. Place the gazpacho in the refrigerator to chill for 1-2 hours.

Serve the chilled gazpacho in glasses and garnish with mint leaves. Enjoy!
