Apple Crumble Muffins

Serves: Makes 6 muffins
Dietary preferences: Vegetarian

Ingredients:

  • 150g wholemeal plain flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt
  • 1 medium red apple, grated
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup
  • 1 egg
  • 125ml low-fat milk
  • ½ tsp vanilla extract

Crumble:

  • 2 tsp coconut sugar
  • 2 tbsp almond meal
  • ½ tsp ground cinnamon
  • 1 tbsp rolled oats
  • 1 tbsp coconut oil, melted
     

Method:

1. Preheat the oven to 180°C (350°F) and place 6 cupcake liners in a 6-cup muffin tin. Lightly spray the liners with oil spray.

2. Place the flour, baking powder, cinnamon, and salt over a large mixing bowl. Add the apple and stir until well combined.

3. Whisk the coconut oil, maple syrup, egg, milk and vanilla together in another mixing bowl. Add the egg mixture to the flour mixture and stir gently to combine. Do not overmix.

4. To make the crumble, place the coconut sugar, almond meal, cinnamon, rolled oats and coconut oil together in a small bowl and mix until crumbly and well combined.

5. Spoon the batter evenly into the cupcake liners and sprinkle the crumble over the top. Bake in the oven for 15-20 minutes or until a skewer inserted into the middle of a muffin comes out clean.

6. Leave to cool for 5 minutes and serve. Allow the remaining muffins to cool completely and keep in the refrigerator for up to 5 days or in the freezer for up to 2 months. Enjoy!
