You are in for a real healthy treat with this amazing Choc-Peanut Butter Protein Pie!
Peanut Butter is one of my all time favourite treats and the classic flavour combos in this recipe are perfect for a weekend treat, plus it contains some great sources of natural protein.

Choc-Peanut Butter Protein Pie Recipe

Total time: 25 mins + 1 hour chilling time
Serves: 10
Dietary preferences:  Vegetarian, Grain-free

Ingredients:

Crust:

  • ½ cup cashews
  • ½ cup walnuts
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 8 dates, pitted
  • 2 tbsp cacao powder

Filling:

  • ½ cup of natural peanut butter
  • 2 scoops of whey protein isolate (peanut flavoured) or 60g of powdered peanut butter
  • ½ cup  cottage cheese
  • ½ cup natural yogurt
  • 2 tbsp unsweetened almond milk
  • 1 tsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Chocolate Topping:

  • 2 tbsp coconut oil, melted
  • 1 tbsp maple syrup
  • 2 tbsp raw cacao powder
  • 1 tsp vanilla

Method:

  1. Start with the crust by combining all crust ingredients together in a food processor, processing until they form a crumble.
  2. Place the mixture into a 8 inch pie pan, start to mold the mixture to the bottom of the pan, forming a crust.
  3. Place the cottage cheese, peanut butter and natural yoghurt together in a blender and begin blending. Add in the remaining filling ingredients.
  4. Make the chocolate topping by combining all ingredients together.
  5. Pour the filling mixture into the crust (still sitting in the pie pan).  Smooth down with a spatula and pour over chocolate topping. Freeze for one hour.
  6. After the pie has chilled, take it out of the freezer and remove from the pan and place on a serving dish.
  7. Serve immediately and enjoy!
