- 2 ripe mangoes, diced
- 1 small red onion, peeled and diced
- 1-2 jalapeneos, seeded and diced (optional)
- 1 tbs coriander, chopped
- Juice of one lime
- Toss all ingredients together until combined. Season with a pinch of salt and pepper - serve fresh or store in the fridge for later. Told you it was easy!!
