I love this healthy bircher muesli recipe, it is one of my favourite breakfasts! This makes 2 serves, but if you want to make more just multiply the quantity of the ingredients and refrigerate for up to a week in a sealed container.
120g rolled oats
½ tbsp chia seeds
250ml low-fat milk (or milk of choice) + extra to serve the next morning
1 tsp maple syrup
1 tsp vanilla extract
1 tbsp almond flakes
1 tbsp shredded coconut
1 tbsp currants
1 tbsp chopped dried papaya or mango
1 tbsp goji berries
50g low-fat plain yoghurt
1. Place the oats, chia seeds, milk, maple syrup, vanilla, almonds and coconut in a bowl and stir well to combine. Cover with cling film and leave to soak overnight in the refrigerator.
2. The next morning, chop the apple into small pieces and add to the oat mixture with the currants, papaya (or mango) and goji berries. Stir well to combine. Add additional milk if a thinner consistency is desired.
3. Place in a serving bowl and top with the yoghurt. Enjoy!
