A little while ago I shared a blog post that showed you different ways to cook eggs, from soft-boiled to scrambled. Now that you’re an eggs-pert (I couldn’t resist) in making eggs, I wanted to give you a few ideas for using them!

Here are some of the best foods to have with eggs:

Potato rosti and rocket with egg

Perfect for breakfast, brunch or any other light meal, a soft-boiled egg is delicious with a little crunch! Combining potato rosti with rocket mixes different flavours and textures, and the egg ties it all together perfectly. 

Serve up a plate of this for some protein, carbohydrates, magnesium and a bunch of vitamins to energise you for the morning!

On a burger

If you haven’t already, try adding a fried egg to your burger because you will not regret it! A homemade burger on a wholemeal bun with some spinach, tomato and egg is so nice and filling. Definitely a healthier way to indulge a burger craving. 
 

With roast vegetables

Egg can work so well with roasted vegetables! I know it sounds like a bit of a strange combination, but try serving a fried egg next to something sweet like honey carrots with dukkah and feta. There’s something about the creamy egg yolk contrasting with the sweet carrots that just works — I can’t explain it! Haha!

Healthy devilled egg spread

For those days when you want a quick snack before you rush out the door, try making a devilled egg spread to have on top of rice cakes! Skip the mayo and use avocado instead for a healthier alternative that still gives you the texture you want. 

Ingredients:
3 eggs
1 medium avocado
½ tsp Dijon mustard
½ tsp lime juice
¼ tsp paprika 
sea salt and ground black pepper, to taste
Rice cakes

Method:

  1. To hard-boil the eggs, place them into a small saucepan and fill with cold water until they are covered by 2 cm. Bring the water to the boil over high heat. Reduce the heat to low and simmer, covered, for 7–8 minutes. Remove the eggs from the pan with a slotted spoon and place in a bowl of iced water. Leave for 1 minute. Tap the eggs gently on the bench to crack the shells and peel. 
  2. Once cool, remove the cooked yolks from the hard boiled eggs and place into a medium bowl. 
  3. Roughly chop the egg whites and add them to the bowl. 
  4. Scoop out the avocado and add it to the bowl, along with the dijon mustard, lime juice, paprika, salt and pepper. Mash everything together with fork until well combined 
  5. Spread the mixture onto rice cakes or crackers and enjoy!
