Blueberry Smoothie Bowl Recipe from my Hard Copy Book!



Say hello to your new favourite summer breakfast! This bowl of blueberry goodness will go down a treat on warm mornings. You can find this recipe plus over 200 more in my new hard copy book! The best thing is all of the recipes fit into a healthy meal plan, that is sustainable for life!

Ingredients (serves 1): 
160g frozen blueberries 
35g tinned chickpeas, drained and rinsed
200g low-fat plain yoghurt
1/2 cup (125ml) low- fat milk

30g natural muesli
40g frozen blueberries, thawed
1 1/2 teaspoons goji berries
1 tablespoon shredded coconut 

Pre order


1 .Place the blueberries, chickpeas, yoghurt and milk in a blender and blend until smooth. 

To serve, pour the smoothie mixture into a bowl and top with muesli, blueberries, goji berries and shredded coconut. Enjoy!
