Caprese Bruschetta makes for a delicious Italian-style appetiser! This recipe uses super simple ingredients and it really is so easy to make!

Caprese Bruschetta Recipe

Ingredients:

  • 2 slices sourdough bread
  • 6 cherry tomatoes, halved
  • 50g baby bocconcini, halved
  • 2 tsp olive oil + extra for brushing on the bread
  • 1 tsp balsamic vinegar
  • fresh basil leaves

Method:

1. Place the sourdough bread in a toaster and toast to your liking. Using a pastry brush, brush one side of the sourdough bread with a little olive oil.

2. To make the dressing: whisk the olive oil and balsamic vinegar together in a small bowl.

3. Place the cherry tomatoes and bocconcini on the toasted sourdough. Top with the fresh basil leaves and drizzle over the balsamic dressing. Enjoy!
