This is such a great sugar free sorbet recipe! Watermelon is sweet enough :) squeeze some fresh lime, pop it in the freezer and you have a healthy refreshing summer treat.
Ingredients (makes about 4 cups):
¼ seedless watermelon
lime juice, to taste
fresh mint leaves, to serve
1. Remove the rind from the watermelon and cut into cubes. Place in a container or on a tray and freeze overnight.
2. Place the watermelon cubes and lime juice in a high-powered blender or food processor and pulse until smooth.
To serve, scoop the watermelon sorbet into glasses and top with mint. Enjoy!
*Leftover watermelon sorbet can be stored in an airtight container in the freezer for up to one month.
