Blueberry Smoothie Bowl Recipe

Dietary preferences: Vegetarian
Ingredients:
- 160g frozen blueberries
- 35g tinned chickpeas, drained and rinsed
- 200g low-fat plain yoghurt
- 1/2 cup (125ml) low- fat milk
Toppings
- 30g natural muesli
- 40g frozen blueberries, thawed
- 1 1/2 teaspoons goji berries
- 1 tablespoon shredded coconut
Method:
1. Place the blueberries, chickpeas, yoghurt and milk in a blender and blend until smooth.
To serve, pour the smoothie mixture into a bowl and top with muesli, blueberries, goji berries and shredded coconut. Enjoy!
