Egg Omelette In A Mug Recipe

Egg Omelette In A Mug Recipe

Ingredients:
- 2 tbsp baby spinach leaves, shredded
- 1 tbsp medium green capsicum, diced
- 1 tbsp medium tomato, diced
- 1 tbsp feta cheese, crumbled
- sea salt and ground black pepper, to taste
- 1 large whole egg and 3 egg whites, lightly beaten
Method:
- Lightly spray a microwave-safe mug with oil spray.
- Place the spinach, capsicum, tomato and feta in a small bowl. Season with salt and pepper and toss gently to combine. Transfer to the prepared mug.
- Gently pour over the beaten egg and stir gently to combine.
- Microwave, uncovered, on high for one minute, then stir. Cook for a further 45 seconds to one minute or until the eggs are cooked to your liking.
- Leave the omelette to stand for one minute. Enjoy!
