Strawberry French Toast Recipe
If you have a soft spot for French toast, this recipe is definitely for you! The delicious fresh strawberries make this so enjoyable for breakfast, or for brunch on a day off. Make up a batch to enjoy with a friend or with the family — I’m sure everyone will love it!

Strawberry French Toast Recipe

Dietary preferences: Vegetarian, Nut-free
Ingredients:
- 250g strawberries, hulled and quartered
- 3 tsp vanilla extract
- 2 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp honey
- 2 large eggs
- 100 ml low-fat milk
- 1 tsp ground cinnamon
- 4 thick slices sourdough bread
- 100g low-fat plain yoghurt
- mint leaves, to garnish
Method:
1. Rinse the strawberries under cold running water and drain.
2. Heat a saucepan over medium heat. Add the strawberries, 2 tsp vanilla, lemon zest and lemon juice and cook for 10-15 minutes, stirring occasionally. The strawberries will start to break down and release some juice but there will be some chunks of strawberries too.
3. Add the honey and cook for a further 5 minutes, stirring occasionally. Remove from the heat and set aside to cool slightly.
4. Whisk the egg, remaining vanilla, milk and cinnamon together in a large bowl.
5. Heat a non-stick fry pan over medium heat and lightly spray with oil spray.
6. Dip the bread in the egg mixture, evenly coating both sides. Shake off any excess mixture. Cook for 2-3 minutes on each side until lightly browned. Transfer to a plate and cover with aluminium foil to keep warm. Wipe the pan clean and repeat with the remaining slices of bread.
7. To serve, place the French toast on two serving plates top with the strawberries and yoghurt. Garnish with mint leaves. Enjoy!
