Summer Salad Recipe

This is my go-to Summer Salad. It’s fresh, simple to make and colourful! Brought together by a delicious lemon chia dressing, it’ll be a hit on a warm summer's day :)
Summer Salad Recipe

Serves: 1
Dietary preferences: Vegetarian, Dairy-free, Nut-free, Gluten-free
Ingredients:
- ¼ medium red capsicum, sliced
- 2 medium radish, sliced
- ½ medium cucumber, sliced
- 4 red cherry tomatoes, halved
- 4 yellow cherry tomatoes, halved
- 1 small handful baby chard leaves
- fresh basil leaves, to taste
Dressing (serves 1)
Lemon chia dressing
Method:
1. Place all the salad ingredients in a bowl and toss gently to combine.
To serve, place the salad on a serving plate and drizzle over the lemon chia dressing. Enjoy!
