Halloween is right around the corner and I think these super cute energy balls make the perfect treat! They are a great source of energy if you are looking for a post-workout snack, or simply just a delicious treat you can make all your friends and family.

Halloween Spider Energy Ball Recipe

Total time: 25 mins + 30 mins chilling time
Serves: Makes 12 balls
Dietary preferences: Vegetarian, Vegan, Dairy-free

Ingredients:

  • 16 Medjool dates
  • 4  tbsp smooth peanut butter
  • 2  tbsp cacao powder, plus extra for dusting
  • 100 g almond meal
  • 1 tsp vanilla extract
  • 2 pinches of salt
  • thin black liquorice 
  • 24 candy eyeballs
     

Method:

1. Line a baking tray with baking paper.

2. Place the dates in a heatproof bowl. Cover with boiling water and leave to soak for 15 minutes to soften. Drain.

3. Place the dates, peanut butter, cacao powder, almond meal, vanilla and salt in a food processor and process until well combined. The mixture should be a little sticky. If it is too thick, add 1-2 tablespoons of water.

4. Scoop out 1 heaped tablespoon of the mixture and roll into a ball using wet hands. Lightly dust with cacao powder and place on the lined baking tray.

5. Cut the liquorice into even pieces to create the spider legs.

6. Gently press the liquorice legs into the chocolate energy ball, so that there are 4 legs on each side of the energy ball. Gently press two candy eyeballs to create eyes.

7. Place the balls on the lined baking tray and refrigerate for 30 minutes.

8. To serve, place the spider energy balls on a serving plate. Enjoy!
