I always get asked what I eat for breakfast and these oats are one of my favourite recipes to make when I know I'm not going to have a lot of time the next morning. You can prepare them the night before and eat them on-the-go the next day or use that extra 10 minutes to sleep in! The best thing is you can experiment with any flavours you like, try adding different fruits, nuts, seeds and even peanut butter.
1 tbs chia seeds
1/3 cup rolled oats
3/4 cup unsweetened almond milk
1 tsp honey
1/2 tsp vanilla extract
2 tbs chopped pecans
Mixed berries to top
Shredded coconut to top
1. Stir chia seeds, oats, almond milk, honey, vanilla extract and chopped pecans all together. Pour into glass jar or bowl.
2. Place into fridge and chill overnight.
3. Top with fresh berries and coconut when you are ready to serve. Alternatively you could heat up the berries in a saucepan until broken down and use as a berry sauce.
